Blast chillers are usually a self-contained, cabinet-style system or a space lined with insulated panels and fitted with refrigeration equipment.

Cooling food slowly can cause bacterial growth – the danger zone is between 5 and 63 degrees, so it’s important to get your food as cold as possible quickly.
Keeping food at the correct temperature will prevent food poisoning bacteria from growing. When the temperature quickly reaches below freezing point, the growth of microorganisms decreases rapidly, and you can then transport the products to a more conventional freezer for storage.
